It’s Monday again! How was your weekend? We added two very small members to our family yesterday! I will be introducing them later this week. Aside from that, our weekend was pretty slow. Mr. Simple had to work, but he’s home with us today!
For the rest of the month we are only going to the store to pick up milk, yogurt, and fresh produce. We stocked up at the beginning of the month and have plenty of food to last us until the middle of February.
I meant to do my menu plan yesterday, but with all of the excitement and very tired kids, I ended up falling asleep instead of making my menu plan! I’m looking for comfort foods for dinner this week. Here’s what we have going on:
honey mustard lemon chicken, rice, steamed broccoli
Pan-seared salmon with tomato basil feta sauce, smashed sweet potatoes
Beef tips with gravy, rice, steamed green beans
homemade chicken nuggets, mashed potatoes, Brussels sprouts
Penne pasta with tomato sauce and Italian sausage, garlic toast, side salad
Shredded Korean beef tacos, seasoned rice
As you may know, I don’t specifically plan breakfast or lunch. We will often eat eggs, especially baked eggs, or pancakes for breakfast. Lunches are normally leftovers or egg salad sandwiches.
We eat white Basmati rice for now and love it.
I’m also planning to do a bit of baking this week. Oatmeal raisin cookies are on the agenda. I’m looking for some good muffin recipes to bake for snacks.
