Peppers and Eggs

The other day I was browsing You Tube and I came across a series of videos called Great Depression Cooking with Clara. These videos are so cute. Clara is an adorable lady and I really enjoyed listening to her tell stories from the Great Depression while cooking some meals that she ate during that time. Yeah, I got sucked in and watched several of her videos the other night.

I really wanted to maker her peppers and eggs recipe. I had some peppers that I bought on sale and froze and needed to used them. I like doing that because peppers are so expensive here. I just chop them up and freeze them in Ziplock bags. I made some adjustments to Clara’s recipe. I thought it was pretty yummy!

Peppers and Eggs

2 bell peppers, chopped

1/2 onion, sliced

1 tablespoon olive oil

Salt and pepper to taste

2-3 eggs

Saute the peppers and onions in the olive oil in a skillet with some salt and pepper. Once the peppers and onions are soft, add the eggs and scramble around until they are cooked to your satisfaction. Serve immediately.

That’s it! It’s a really simple recipe and is great for brunch, lunch, or a quick dinner!
