Healthy Green Eggs and Ham

Everyone knows about Dr. Seuss’s Green Eggs and Ham. My kids love when I read them that story, although I have to admit it’s not one of my favorite read-alouds! So far, I haven’t introduced my kids to green eggs and ham colored with food coloring. I would like to keep that request at bay as long as possible. However, I recently introduced them to my version of green eggs and ham, and boy was it a hit!
Let me start off by saying this idea sort of just fell together. My version of green eggs and ham is simple skillet meal. I knew a lot of people used greens when they made quiches and fritattas, but we love scrambled eggs, and heck, you can add just about whatever you want to scrambled eggs. It’s so easy.
I went grocery shopping and knew I needed to pick up some kale for the delicious Zuppa Toscana soup that I have fallen in love with. I was going to grab a couple of bunches when I noticed a huge bag of prewashed kale that was already separated from the stems. Now, I know this isn’t the most frugal thing, but with all that we have going on with moving it’s nice to have a bag of these delicious greens just sitting in the fridge ready to go. I knew there was plenty in there that I could use to make kale chips and maybe even a little something else. Could I have bought a few bunches of kale and removed them from the stems myself for later use? Yes, and maybe I would in the future. This season of life is just so busy I’m not going to beat myself up for spending a little more so the work is already done for me.
I digress. This recipe is so incredibly simple!

Healthy Green Eggs and Ham
Ingredients:
1 tablespoon butter
1 handful kale
2-3 eggs
1/2 cup diced ham
Melt butter in a skillet and add kale. Place a lid over the skillet and allow kale to wilt and turn a bright green. Add diced ham and eggs. You’ll know it’s done with the ham is heated through and the eggs are cooked to your liking!
