Instant Pot Pot Roast – Dump N Go Meal

So I’ll be the first to admit I was really scared of pressure cooking. I seriously thought it was extremely dangerous. I got a pressure cooker around Christmas last year and it has made dinner time go so smoothly! I love the way it cooks the food quickly with incredible flavor. Today I’m going to show you my Instant Pot pot roast recipe. This is a super simple dump and go recipe that makes your Sunday pot roast a reality any night of the week! It’s definitely one of those easy Instant Pot recipes you’ll want to have in our back pocket!

Pressure Cooker Pot Roast
When I was growing up we typically only had roasts on Sundays after church. Well, my family these days is in to Sunday hamburgers. Now that it’s fall here, I was really craving a good ol’ roast with potatoes and carrots. After a super busy day out for a field trip yesterday, I was excited that I could still come home and get a roast with all the trimmings on the table for dinner.
The recipe cooks within an hour, but you have to add some time for the electric pressure cooker to come up to pressure, so I would say you need around two hours total for this meal. I use my Farberware Electric Pressure Cooker for this recipe, but you can use any pressure cooker.
Start with a 3ish pound chuck roast. You can absolutely season and sear the roast right in your pressure cooker for more flavor, but that wouldn’t make this recipe dump and go!

Add half a packet of Lipton beefy onion soup. You can also add in other seasonings if you’d like.

Throw in a chopped onion.

I peeled and chopped four large carrots and threw those in.

Finally, I chopped three large russet potatoes and added those in, as well. You can use any potatoes you like. Add the rest of the seasoning packet and two cups of beef broth.

Close the lid on your pressure cooker and make sure it’s set for sealing. Set your pressure cooker to the stew/meat setting and cook for 60 minutes. If you have time, let the pressure cooker naturally vent for about 20 minutes after it’s done cooking, release the pressure, and slowly remove the lid.

Voila, you have a delicious pot roast with vegetables all ready to go! I remove the pot roast and slice it before serving. The juice that remains after you’ve removed the meat and vegetables can be turned into a yummy gravy, too, if you’d like.

A delicious pressure cooker pot roast with vegetables.
Ingredients
- 1 3lb. chuck roast
- 1 packet Lipton beefy onion soup
- 1 onion, chopped
- 4 large carrots, peeled and chopped
- 3 large russet potatoes, cleaned and chopped
- 2 cups beef broth
Instructions
- Place roast in pressure cooker.
- Add half a packet of Lipton soup mix.
- Add all chopped vegetables.
- Add remaining soup packet and beef broth.
- Set pressure cooker to sealing, set to meat setting, and cook for 60 minutes.
- All pressure cooker to vent naturally for 20 minutes, release remaining pressure, and slowly open the pressure cooker.
